Great Find: Quinoa

One of my new favorite foods is quinoa (pronounced "keen-wa").  It is easier to make than rice, and it comes out perfect every time.  This ancient grain tastes very similar to a high quality rice. 

I prepare this simple meal about once every two weeks:
Place 1 part uncooked wholegrain quinoa in an iron skillet, along with 2 parts water and a splash of lemon juice.  Atop that, I stack 2-4 individually frozen tilapia fish fillets.  Season (any spices that you like with fish).  I heat the water up until it is bubbling, then I put a tight-fitting lid on, and turn the heat down to low and let it all steam for 20 minutes.  The fish comes out perfectly cooked and the quinoa has soaked up the excess liquid.  If I remember, about 15 minutes into the process, I add a handful of frozen peas, shrimp, or broccoli.   One meal, only one dish to wash.

What a yummy recipe. I have heard lots of good things about quinoa. I have yet to try it. I am not sure where to buy it.

Some big box grocery stores are starting to carry quinoa, but it is almost always available in any health food store or whole foods market.
